1. Mixed pig's ear

Practice:
1. Clean the pig's ear, scallion, ginger, aniseed and fennel, cinnamon, millet peppercorns, cilantro leaves, wash and ready to go
2. Put all ingredients and Pig's ear into the pot, add appropriate amount of cold water and a small amount of cooking wine, turn the pig on high heat, turn it to medium heat and cook for about 30 minutes
3. You can use chopsticks to pierce the pig's ear, which proved to be very good. If you cook it too much, the pig's ear will be crunchy.
4. While the pig's ear is cooking, you can prepare other ingredients, such as chopped cilantro, green onion, ginger, garlic and millet pepper.
5. Put the ingredients into a mixing bowl, add salt, sesame oil, soy sauce, balsamic vinegar, old soy sauce and a little sugar and mix well
6. When the pig's ears are cooked, lift them up and rinse them several times with cold water to dry them out and slice them into thin slices
7. Pour the chopped pig's ears into a large bowl, put on the sauce, sprinkle with the white sesame seeds, and then mix them evenly with the coriander leaves. Mix.
2. Cold Beef Tendon
Ingredients;
Beef Tendon, Garlic, Cilantro, Chili Oil, Oyster Sauce, Lettuce, Soy Sauce
Practice Steps;
1. Beef Tendon meat should be boiled beforehand. Bring it to a boil in a pot and cook on low heat for about an hour. Pierce it with chopsticks. You can usually remove it. Rinse and drain.
2. Thinly slice the beef tendon into horizontal stripes, not too thin, only half a centimeter thick
3. Heat the cooking oil in a wok, add the garlic to the frying pan, and fry until the garlic is slightly browned
4. Add a good amount of water and simultaneously add the oyster sauce, soy sauce, and water and bring to a boil
5. Pour the boiling broth into a bowl of the sliced tendon and stir for 10 minutes. Rotate a few times in between so that the beef tendon can fully absorb the soup
6. Pour in the red oil, mix well, and let it stand for more than 10 minutes, stirring a few times in between
The cold beef tendon is ready to be served.
3. Cold cucumber
Ingredients;
cucumber, cilantro, red pepper, garlic, soy sauce, vinegar, hot sauce, chicken broth, salt, sesame oil
Practice Steps
1. Remove the cucumber from the root, wash it, flatten it and slice it into segments, put it on a board and set it aside
2. Put in the appropriate amount of salt, mix it well and let it marinate for about 2 minutes
3. Add garlic, soy sauce, vinegar, red pepper, chicken essence, salt and sesame oil to taste
4. Mix well and sprinkle with cilantro and cucumber.
