Jiaozi, a kind of food, originated from Shishou, Hubei.
Its practice is to soak glutinous rice in water for one night, then dry it, and grind it into particles by machine, which is not as fine as flour, but slightly thinner than sand. Then stir-fry the glutinous rice powder in an iron pan, add water, knead it into a ball, and wrap it with stuffing. The general stuffing is a special pickle made of glutinous rice in Hubei called "Tai Jiao" (glutinous rice is fermented in a porcelain pot and fried) or stewed vegetables (marinated tofu, marinated kelp, braised pork, etc. ), followed by the mixed stuffing made of dried fragrant jerky and mustard diced, and the stuffing made of vermicelli. Jiaozi is about 7 cm in diameter and can be eaten after steaming or fried after steaming.
Now it is generally found in supermarkets or vegetable markets in Hubei, and it is estimated that it is difficult to see outside Hubei.

1. The supermarket bought six finished jiaozi (steamed). If they are raw, you must steam them in a steamer 10- 15 minutes after you get home.
2. Pour in more than half of the pan oil. When the oil temperature reaches 80% heat, put it in the dough, fry it over medium heat, and turn it slowly until each side is evenly colored.
3. Fry the jiaozi until it is even and golden yellow, and take out and drain the oil.
