Steps:
1. Soak the dried shrimps in clear water 15 minutes, take them out and drain them.
2. Take a pot, add peanut oil and minced ginger and garlic, and stir fry over low heat.
3. Add dried shrimps and cooked peanuts and continue to stir fry.
4. Add rock sugar and stir-fry until the rock sugar melts and becomes caramel color.
5. Add peanut butter, bring to a boil on low heat, turn to low heat, and stir slowly until the oil separates and the color turns dark brown.
6. Turn off the fire, add salt, soy sauce, Chili oil and sesame oil, and stir well.
Note: If the taste is too rough, you can choose to use a blender to beat the shrimp, cooked peanuts and peanut butter into fine mud before cooking.
