Methods/steps
1, first, we wash all the tomatoes, and then draw a cross-cut on the table to facilitate peeling. When choosing tomatoes, we'd better choose varieties with large solid fruit.
2. Pour clear water into the pot, then we put in tomatoes and wait for the water to boil slowly. When we see tomatoes peeling, we immediately turn off the fire, then peel off the skin of each tomato and remove the green pedicel and part of the white core, because the white part is hard and affects the taste.
3. After peeling, we cut the tomatoes into pieces and put them into a blender to make juice. Because there is not much sauce made this time, I use a juice cup, which is more convenient.
4. After juicing, we pour the tomato juice into the pot (no need to add water), slowly boil the soup with medium heat, and then we add 2 tablespoons of white sugar and appropriate amount of chicken essence. The addition of white vinegar is actually to increase the acidity of the sauce. Tomatoes also contain acidity. Friends can taste the taste first and decide whether to add white vinegar.
5. After adding the auxiliary materials, we will change the fire and slowly start to collect the juice. During this period, we remember to use a wooden spoon to stir in one direction to prevent the sugar from carbonizing and sticking to the bottom of the pot after high temperature.
6. When there is some sandy feeling in our sauce, we can turn off the fire and prepare the pot. If some friends like tomato granules, we can add a small tomato, cut it into cubes, and put it in the pot together until the diced tomatoes are soft.
7. Remember not to cover the lid in the process of boiling juice, otherwise the newly generated water vapor will flow back into the tomato juice, which will affect the juice collection. After cooking, we find a small glass jar and put it in cold storage, so we can take it at any time.
