The method of making fermented rice flour is as follows:
Ingredients: fermented rice flour, warm water, cornmeal, ordinary flour and water.
1. Let’s first introduce the first part, how to make old yeast. This is the old yeast that my family made before, and I will continue to use it as a starter today.
2. Crush the old yeast and pour it into the basin. If there is no old yeast, you can also use baking powder instead. Or when steaming the steamed buns, leave a small piece of dough alone and put the dough into it. Use it as old noodles, then pour a small bowl of warm water into the basin and squeeze it with your hands to dissolve the yeast.
3. Next, add cornmeal into the basin in batches, stir evenly with chopsticks, and stir evenly and finely until it becomes a slightly thinner paste. Wrap it with plastic wrap and let it ferment. The first fermentation took almost two hours. After fermentation, it looked like this, full of small honeycomb-shaped bubbles.
4. Continue to add two spoons of cornmeal into the basin and stir evenly. Then add a small amount of warm water and stir. Continue to stir evenly and finely until it becomes a slightly thicker paste. After stirring, Continue to cover with plastic wrap and let it ferment.
5. Now that the second fermentation is completed, it took almost two hours. Add two spoons of cornmeal into the basin, add a small amount of warm water and stir evenly. This time the stirring is better than the last time. Once thickened, cover it with plastic wrap and let it ferment.
