Foreword
The pimple soup in Beijing is different from that in Northeast China. Most of them are tomato-based, with some egg liquid thrown in. Each one has its own advantages. Occasionally, it is better. For a change.

Old Beijing Pimple Soup
1
Prepare the ingredients, process all the required ingredients, and peel the persimmons.
2
(This step is best done after the soup pot has boiled.) Slowly add warm water to the flour little by little, stirring quickly while adding.
3
If the lumps are too big, tear them apart with your hands or chopsticks.
4
Put a small amount of oil in the pot, heat it, and simmer the onion and ginger. Add tomatoes and tomato paste and continue stir-frying.
5
Stir-fry the soup and when the persimmons are basically dissolved, add salt and sugar and stir-fry. Add water and bring to a boil over high heat. Turn to medium-low heat, add the gnocchi, and stir at the same time, until all the gnocchi are added to the pot, cover the pot and cook for a while, about 5 minutes.
6
Add salt to taste, and pour the beaten egg liquid along the edge of the pot. Stir it and turn off the heat. Drizzle with a few drops of sesame oil, coriander, and green onions.
Tips
Slowly add warm water little by little to the flour, stirring quickly while adding. It is best to push the flour to one side of the container, mix some lumps, put some into the boiling soup pot, and then continue to stir new lumps.
