Ingredients:
Soup head: 3 pig spines, 200g pig skin, 200g pig fat, one onion and one carrot.
Seasoning sauce: 50g of dried seafood, 0/00ml of soy sauce/kloc, 50 ml of glutinous rice, 0/00ml of Japanese wine/kloc, a little sugar and 20g of salt.
Ingredients: soft-boiled eggs 1-2, barbecued pork 2-3, chopped green onion, garlic paste, seaweed 2, noodles and noodles 1 person.

Soy sauce, sake, glutinous rice and water are in the ratio of1:1:1:1,and then two star anises are added, boiled and cooled. After 30 minutes, open the pressure cooker, take out the pork belly, put it in the marinade, and then put it in the refrigerator for pickling.
3. After one hour, open the pressure cooker, add onions and carrots, and cook the soup for the first hour with high fire. At this time, you should stir while cooking to accelerate the emulsification of the soup head. At this time, Lamian Noodles's sauce is made. The dry seafood is soaked in water the day before. After soaking for one night, the dry seafood and water are poured into the pot. After adding soy sauce, glutinous rice, sugar and salt, it is boiled for about 20 minutes, and then the dry seafood is fished out and discarded. It is better to buy dry goods with kelp and dried fish or shredded firewood.
4. After the soup is cooked, filter it with a strainer, prepare the delicious eggs, slice the pork belly and burn the surface with a blowtorch to emphasize the aroma of oil. There is no room to knead the dough at home, so I buy ready-made noodles. If it's made noodles, the boiling time is suggested to be 30 seconds less than that on the package. If it's made in Japan, it can be boiled according to the time on the package. Finally, prepare a bowl, pour 3-5 teaspoons of seasoning sauce into the bowl, then pour the dolphin bone soup until it's eight minutes full, and then add the cooked noodles.
