1. Bitter melon and lean meat soup
Ingredients: 250 grams of bitter melon and 100 grams of lean pork. Seasoning: salt.
Method: Wash the bitter melon, remove the pulp and cut into cubes; wash the lean pork and slice it. Add an appropriate amount of water to the pot, add the bitter melon and pork slices, bring to a boil over high heat, then cook over low heat until cooked through, and finally add an appropriate amount of salt to taste.
2. Bitter Melon Bone Soup
Ingredients: 300 grams of large bones, 1 bitter melon, salt, green onion.
Method: Chop the large bones into sections (be careful not to chop too much to avoid losing the bone marrow), put them in boiling water and cook for 2 minutes with the lid off to remove the blood foam. Remove the large bones and put them in cold water. Pour enough water into the pot, add the bones, bring to a boil over high heat, then turn to low heat and simmer for 2 hours, then start processing the bitter melon. Wash the bitter melon, remove the inner seeds and white skin, and cut into 0.6 cm thick slices. (If you are worried that the bitter melon is too bitter, you can marinate the bitter melon with salt for a while and squeeze out the bitter melon juice). Pour in the bitter melon and cook together with the bone broth for 15 minutes. Chop the green onion into mince, sprinkle it into the cooked bone soup, and season with salt.
3. Pork belly and bitter melon soup
Ingredients: 1 pork belly, 30 grams of bitter melon, and a little salt.
Method: Wash the pork belly, add bitter melon slices, add water and salt and simmer for 4 hours.
