Ingredients:chicken claws, lemon, chopped peppers, garlic, ginger, scallions, salt, coriander, cooking wine, soy sauce, balsamic vinegar, chili oil, sugar.
First step:Cut off the nails of chicken claws and rinse well.
Step 2:Put the chicken claws in a pot of cold water, add green onion, ginger, cooking wine, boil over high heat, skim off the foam, turn the heat down and simmer for 8 minutes, turn off the heat and simmer for 2 minutes.
Step 3:Take out the chicken claws, rinse well, and soak in ice water for 30 minutes.
Step 4:Mix a marinade: ? tsp salt, 2 tbsp sugar, 3 tbsp vinegar, 5 tbsp soy sauce, 1 tbsp chopped pepper, 1 tsp chili oil (you can also use millet chili instead). Mix well.
Step 5:Prepare minced garlic, cilantro, lemon slices and set aside.
Step 6:Cut a hole in the back of the chicken claws to make it easier to remove large bones. Push the nail up into the cut and break it at the joint, do the same for the toes.
Step 7:Fish out the deboned chicken claws and rinse them again.
Step 8:Pour the chicken claws into the prepared marinade and stir well.
Step 9:Pour in the minced garlic, cilantro and lemon slices and stir well.
Step 10:Cover with plastic wrap and refrigerate the marinade overnight. You can eat it.
