Yangzhou fried rice, also known as Yangzhou egg fried rice, is a classic Han snack in Yangzhou, Jiangsu. According to legend, it originated in the Sui Dynasty, and was developed by successive generations of chefs through gradual innovation and combining the characteristics of Huaiyang cuisine. In a broad sense, Yangzhou fried rice has many varieties, including "gold-wrapped silver", "assorted egg fried rice" and "green vegetable fried rice". Among them, assorted egg fried rice is the most typical variety. When making it, first fry the eggs, then fry the other ingredients and season well, set aside and then fry the rice. Finally, pour half of the fried eggs and other ingredients into the dish and stir well. Stir well and then scoop out three portions. Second, put it on a plate, stir-fry the remaining ingredients with the rice in the pot, and cover it with the fried rice on the plate.
