Chinese liquor can be classified according to the following six methods:
1. According to the main raw materials used, it can be divided into: ① Grain liquor. Such as: sorghum wine, corn wine, rice wine, etc. ②Guardan wine (called sweet potato wine and white potato wine in some areas). ③Substitute raw material wine. Such as: powdered residue wine, tofu residue wine, sorghum bran wine, rice bran wine, etc.
2. According to the production process, it can be divided into: ① Solid-state liquor. The raw materials are produced through solid-state fermentation and solid-state distillation. It is my country’s traditional distillation process. ②Liquid liquor. The raw materials are produced through liquid fermentation and liquid distillation. Its product is alcohol, which is processed and blended into ordinary liquor, commonly known as high-end liquor. ③Flavor liquor. Liquor produced by the solid-state method or alcohol produced by the liquid-state method are flavored and blended. ④Fragrant white wine. Liquor produced by the liquid method or alcohol produced by the liquid method is flavored and blended.
3. According to the saccharification starter, it can be divided into: ① Daqu wine. Liquor made from Daqu (which refers to the shape of a song). ② Xiaoqu wine. Solid or semi-solid fermented liquor brewed with Xiaoqu. Due to the climate, it is suitable for production in the hotter areas of southern my country. Liquor made from Xiaoqu is collectively called rice-flavored wine. ③Quick Qu wine.
4. According to the aroma type, it can be divided into: ① Luzhou-flavor type (also known as Lu-flavor type, Wuliangye-flavor type and cellar-flavor type) liquor. ② Light-flavor (also known as Fen-flavor, mellow-flavor) liquor. ③ Maotai-flavor (also known as Mao-flavor) liquor. ④ Rice-flavored (Xiaoqu rice-flavored) liquor. ⑤ Other aroma types (also known as dual-flavor, multiple-flavor, and mixed-flavor) liquors.
5. According to product grade, it can be divided into: ①High-end wine. They are wines with good materials, exquisite craftsmanship, long fermentation and storage periods, and higher selling prices, such as: famous wines and Tequ, Tejiao, Chenqu, Chenjiao, Chenyou, Laojiao, fine wines, etc. ②Mid-range wine. Liquors with a more complicated process, slightly longer fermentation and storage periods, and medium-priced liquors, such as Daqu liquor, grain liquor, etc. ③Low-grade wine. Also known as bulk goods, such as melon dry wine, Chuanxiang wine, flavored wine, grain-flavored wine and bulk liquor sold in rural areas.
6. According to alcohol content, it can be divided into: ①High-alcohol wine (mainly refers to wine around 60°). ②Reduced alcohol (generally refers to wine reduced to about 54°). ③Low-alcohol wine (generally refers to liquor below 39°).
