The steps for making scrambled eggs with luffa are as follows:
Cut off the head and tail of the luffa, scrape off the skin, and rinse. Cut the loofah into hob pieces. Put the cut loofah into water and add a little salt. This way the loofah won't turn black. Add a little water and salt to the eggs and mix well. Heat the oil in a wok, fry the eggs and set aside. Leave some oil in the pot, add minced garlic and millet pepper until fragrant. Pour out the salt water used to soak the loofah, put the loofah into the pot and stir-fry.
Saute the loofah until raw, add salt and stir-fry evenly. Add fried eggs. Add oyster sauce and stir-fry evenly.
