Steps
1. Choose straight peppers, wash and remove the stems. Put the meat filling into a large bowl and prepare the seasoning.
2. Add sesame oil, light soy sauce, salt, oyster sauce, and minced ginger to the meat filling and stir well.
3. Add starch and continue to beat until thick.
4. Cut the pepper in half from the middle and remove the seeds. If you are afraid of spicy food, you can also remove the white tendons inside.
5. Press the whipped meat filling into the pepper and smooth it out.
6. Pour a little oil into the pot. After the oil is hot, add the peppers stuffed with meat and fry.
7. Fry one side until it becomes tiger skin color, turn over and fry the other side.
8. After frying, take it out and place it on a plate for later use.
9. Pour a little oil into the pot and sauté the onion and ginger until fragrant.
10. Add the fried peppers, with the pepper side facing down. Add light soy sauce, cooking wine, sugar, and vinegar along the edge of the pot. Shake evenly, cover, and simmer over low heat until the juice is cooked. When it's almost done, put it on the plate and take it out of the pot.
Tips
I fried one side of the pepper first. Although there was a little starch inside, the meat was still separated from the pepper. Try it first. Sear the meat on the side and see how it goes.
