Braised Pork Chops
Ingredients: pork chops, scallions, ginger
Practice:
1.? Use the back of the knife to break the meridians of the meat on both sides of the pork chop, break all the tendons, and use the tip of the knife to cut a few small cuts at the edge of the pork chop to avoid shrinkage when frying the meat.
2.? Large rows of salt, sugar, pepper into the bottom flavor, fully massaged, add 2 spoons of soy sauce and mix well; small half bowl of water, in order to add and stir to absorb; 2 spoons of starch and mix well, marinate for 20 minutes.
3. Flat bottom hot pan with cold oil on low heat frying large chops, each side of the frying 1 minute and a half or so flip, frying 4-5 minutes or so.
4. Heat oil in a frying pan, put the scallion segments, scallion soft and then enlarge the chops, pour 2 spoons of soy sauce, 1 spoon of cooking wine, 1 spoon of old soy sauce, sesame leaves and cinnamon, add the amount of pork chops half of the hot water, cover the lid of the pot and cook for 5 minutes, when the water boils, add a little salt, sugar to taste, high heat juice.
