Steps:
To make shabu shabu, prepare the lamb cubes by adding the following ingredients to the shabu shabu base. p>Prepare lamb cubes, rinse with water, drain and set aside.
Wash and slice the ginger, wash and slice the scallions and set aside.
Pour water into the pot, add the mutton and ginger slices, boil over high heat, skim off the froth, add cooking wine, salt, chicken essence and pepper, stir well.
Adjust the heat to medium-low and slowly simmer the lamb soup base for about 30-40 minutes, until the lamb is cooked through and the soup base is thick.
Pour the simmering lamb soup base into the hotpot, add the diced scallions and other favorite ingredients, and you're ready to start shabu-shabu.
Note:
When making the shabu-shabu base, use fresh lamb pieces and wash them well to remove odors and impurities.
When simmering the lamb soup base, stir constantly to avoid sticking to the bottom or burning.
You can add other seasonings to the bottom of the pot, such as Chinese herbs like wolfberries and codonopsis or some flavor-enhancing ingredients like chili oil and cilantro, to enrich the taste and texture.
