Preparation: baking powder
Materials:
3 pounds of minced beef (i.e.1.36kg)
Half a tablespoon of salt (about10g)
3 ~ 4 tablespoons of soy sauce (about 48 ~ 64g).

Steps:
0. Add 200-300ml water to all seasonings and mix well, then add minced beef and mix well, and then put it in the refrigerator for the night. (It can also be stored in ice until it is semi-frozen, about 1 ~ 2 hours)
1. Stir with a blender for 20 ~ 30 minutes.
Burn a pot of hot water to about 90 degrees, that is, you can see that the water has just appeared small bubbles but has not yet opened. Grab a small mass of minced meat with your hands and squeeze meatballs out of the tiger's mouth.
3. Scrape off the meatballs with a spoon, put them in hot water, keep the fire in the stove and continue to put them in.
The meatballs just put in hot water sink below. When you see meatballs floating on the water, you can pick them up and put them in ice water.
The prepared beef balls can be frozen in the refrigerator and cooked when necessary.
Tips:
1. Better use baking powder. If you can't buy this, use aluminum-free baking powder.
2. You can add some sesame oil to make fried garlic taste more fragrant.
3. Add some salt to warm water and ice water so that the color of meatballs will not fade (from experience).
4. Friends who like a firm taste can reduce 300 ml of water in the recipe.
5. If the power of the mixer is not high enough, it should be stirred several times instead of continuously, and it should be stirred for a period of time to prevent the machine from overheating and burning out.
6. The cooking method of the original recipe is: put all the beef balls in warm water, then take them out with fire and water boiling 1 min, and soak them in ice water. I think both cooking methods are feasible.
