How to make fish noodles:
1. Ingredients: appropriate amount of flour and alkaline noodles.
2. Knead the noodles. Just like making hand-kneaded noodles, first put wheat flour into a basin, add an appropriate amount of alkaline flour, add water, stir, and knead into a harder dough.
3. Wash the pulp. Add water to a larger pot or porcelain basin and wash the dough into a batter until fibrous material remains.
4. Boil. Pour the washed batter into the pot. If the batter is too thin, let it settle for a while. Pour off the upper layer of water, then pour it into the pot and cook until it becomes a thick paste.
5. The first step in shaping the noodle fish. Place the "well" frame on a basin or pot filled with cold water, and place a leaky basin with a uniform round hole at the bottom in the middle. Use a larger spoon to scoop the thick paste into the leaky basin, and use a spoon to Slide and squeeze it in the leaky basin to let it pass through the round hole, so that the smooth noodle fish will fall into the clear water.
6. Boil vinegar or syrup, stir-fry some side dishes, and prepare minced garlic and chili peppers.
7. After the flour fish has cooled, pick it up with a slotted spoon, drain the water inside, pour it into a bowl, add various prepared ingredients, and you will have a cool, smooth and delicious bowl of flour fish. Done.
