The method of fish head soup
Step 1, first marinate the fish head with 2 teaspoons of cooking wine and 2 teaspoons of salt for 5 minutes;
Step 2, pour the cooking oil into the staub cast iron pot, and when the oil is hot, turn to low heat and put the fish head, and both sides need to be fried; (The fish skin is facing down, so don't fiddle with it when you put it down.)
Step 3, put 4 slices of ginger, 1 onion knot, pour boiling water, boil over high fire, and simmer for 30 minutes;
Step 4, take out the onion knot, pour in tofu, add 1 teaspoon of salt and 1 teaspoon of white pepper, cover the pot and cook for 5 minutes;
Step 5: When you are out of the pot, add the onion and coriander according to your personal taste.
