1. Select kumquat with 90% maturity, rinse it with water, and only punch dozens of small holes in kumquat every day. Soak kumquat in clear water for half a day, pick it up and drain it. Mix about 20 grams of salt with 600 grams of water, heat and boil, then pour kumquat into boiled salt water for 5 minutes, then rinse it with cold water and drain the water.
2. Mix 300 grams of sugar and 300 grams of water, heat and dissolve, pour into a basin and soak in kumquat. Every 1 day, turn up and down 1 time, so that kumquat can absorb sugar evenly. If the sugar concentration is insufficient, you can filter out the sugar solution and evaporate some water by heating. In order to maintain the sugar concentration, continue to soak for about 10 days. When kumquat is full and transparent in appearance and saturated in sugar absorption, take out the drained sugar solution (or boil it with low fire to shorten the soaking time). Put kumquat on the tray to dry until it doesn't stick to your hands.
3. Mix 1 00g of sugar with 25g of water, heat and boil, pour dried kumquat into the boiled sugar solution, boil, stir for1min, immediately take it out, air it to room temperature, and put it in the refrigerator for cooling to get kumquat sugar.
