Lard dumplings I can't help it, it's so famous, the eldest of the "Top Ten Famous Places in Ningbo" can't compare with the Lantern Festival in the north. First of all, you have to use the glutinous rice flour milled by water as the skin. What is a water mill? Is to use a stone mill with water to grind the soaked glutinous rice, and the ground wet rice slurry is poured into a gauze bag with tiny gauze eyes and hung in the open air to dry. After most of the day, when the water leaks almost, it becomes a water mill surface. The taste is particularly delicate and it is not easy to boil. (It is said that there is a kind of water mill in Kunqu Opera, which is melodious and mournful, so it is estimated that it came from this.) Lard stuffing is made of lard blocks, black sesame powder and white sugar, which is oily but not greasy, and does not swell up after eating, which is different from what is sold in the market. Moreover, it is very big, and there is also a central reason for this: when the dumplings are cooked, they are hot inside and cold outside. Some people swallow them in one gulp when they see that they are cold, and they will definitely burn bubbles in their mouths. If you are big, you can only bite the skin a little, and this kind of thing will not happen. This smell also comes out, which is the flavor of Jiangnan, in one word: soft! However, I only ate this practice a few times when I was a child. Later, adults were too troublesome to wrap it in ready-made flour and lard. The taste was not the same as before, and now it is also an "ancient road".

Of course, when foreigners come to Ningbo and eat dumplings, they will go to the "jar duck dog". That signboard is very distinctive: no words, a jar, a duck and a dog will be finished. But this ridiculous signboard does not hinder its popularity. This is the most famous snack bar in Ningbo, and the glutinous rice balls are very natural. But my favorite is iron tofu, and I have to have a few strings every time I go. This kind of iron-plate tofu fried with old tofu has a strong fragrance and is just right old. Of course, it is better to pour some hot sauce.

This reminds me of another store-Cangqiaotou Noodle Shop. I'm a frequent visitor. I have to go every Saturday morning. It is naturally famous for its noodles. The crust is soaked in alkali. It is so old that it has to be fished out just when it is tender. Meat stuffing must be "fat and thin", the most chewy kind, and it must be chewed out with gravy, just like there is oil in meat buns, which is very skilled. Bite it down, tender skin, chewy meat, and what you finish in your mouth is simply a swan song of the ages-that way of eating is exquisite: divide the points, and divide the noodles from the noodles. I usually go in the morning and order noodles and say, "a bowl of raw noodles, less noodles, no onions, and a bowl of noodles with soup." It's delicious to eat like this. It is common that the guests who come here are always "a bowl of Yangchun noodles and a string of noodles!" Self-righteous heroism makes people laugh. Of course, these are snacks in Ningbo, and there are hundreds of other kinds, such as wine-brewed dumplings, small cages and fresh meat wonton, which are too many to eat. But I basically eat cakes in Ningbo. Thanks to my grandmother, she likes to eat, so I ate with her and ate it all before I knew it.

The history of "Ning-style cakes" is longer than that of dumplings, and the history can be tested from the Qin Dynasty. But the most famous "Prince Cake" is said to be from the Spring and Autumn Period and the Warring States Period. Therefore, the current "Ning-style pastry" is one of the twelve major factions in China. Among them, the most famous ones are "salty in sweetness and fresh in saltiness", such as seaweed crisp, seaweed moon cake and seaweed oil praise … all of which are grandma's favorites. There is probably still "Shengyangtai" now. I like crispy bean candy best, mainly because it tastes really good when you melt it in your mouth. Youzanzi is also good, but it is the best in Wenchang canteen. You have to queue up when you buy it.

I don't know who put Ningbo cuisine into snacks. However, since there is such a classification, I will talk about salted yellow croaker.

Materials must be particular. The large yellow croaker must be fresh, and several "willow mouths" should be cut on the back, and the salted horseshoe crab can be cut into the final shape, which can be embedded in the willow mouths for taste. Winter bamboo shoots are optional, mainly for a natural flavor, but in fact they are very fresh without them. Cooking methods vary from place to place. Some people use big soup to stew and then collect the soup, and some fry and then stew, but they all need to add a little yellow wine. When they are finally served, the soup is milky white. Pseudosciaena crocea is fresh and tender, with the name of "trivial golden scale nephrite paste". The salty fish is full of acidity and pure fragrance. However, large yellow croaker is rare now, and it is usually replaced by small yellow croaker at home. People in Ningbo also said: "Don't eat salty soup for three days, your feet are a little sore." It shows that salting acid is superior. In the past, I used to buy Qiu Ai Salted Squid because it was made from Qiu Ai Salted Squid Dung, but now my dad bought the "Murraya murraya" Salted Squid from Metro, which is also good. It will be very sour after a few days, and the cooking is not inferior.

Ningbo cuisine, moss, yellow croaker, stewed snails and so on, all in all, are countless in my memory.
