Wash sweet potatoes, cut in half and steam in a steamer until done. When cooled, scoop out the mashed sweet potato with a spoon, leaving an even width around the edges.
Add 2 tablespoons of light cream to the mashed sweet potatoes. Add 1 tablespoon of honey. Add the melted butter.
Add the raisins. Stir well to form a creamy sweet potato puree. Fill the sweet potato shells with the creamy sweet potato puree.
Smooth out and sprinkle mozzarella cheese over the top and bake in preheated oven at 202 degrees for 15 minutes until cheese is browned.
