The reason why jasmine tea is so troublesome to make is that the fragrance of jasmine was completely lost when it was in bloom. If it is not absorbed by tea in time, it cannot be preserved. Fuzhou people call the most authentic jasmine fragrance "rock sugar flavor", which is sweet but not greasy and refreshing.
The flower buds that have just been picked during the day have no taste of rock sugar. Until 8: 00 or 9: 00 in the evening, as the flower buds gradually bloom, jasmine will gradually release its fragrance. Therefore, tea is usually made at night, and workers have to stay up late every summer. Jasmine tea is to "infiltrate the aroma of good flowers into tea as much as possible, and make tea have a fresh fragrance like flowers". This makes jasmine tea different from the six major teas that pursue tea producing areas: where flowers are produced, there is a scented tea producing area.
