1 red hair crab
1 piece of ginger
Some cooking wine
Some vinegar
How to make steamed red hair crab ?
Fresh live red hair crabs are placed in tap water to shock them (freshly dead red hair crabs can also be eaten). Then scrub the crevices with a brush.
Boil water in a steamer. Slice the ginger, shred the center part and throw the trimmings into the pot. Add vinegar and soak the shredded ginger to make ginger vinegar (you can add a little cool white water to dilute it so as not to overpower the salty flavor and cover the fresh taste of the crab).
Put the red hairy crabs on a plate with their backs facing downward, drizzle the crabs with a little cooking wine, and steam them in a pot over high heat for 20 minutes. You can also add a little cooking wine to the water to help deodorize it.
Turn off the heat, don't open the lid, and use the residual heat from the steam to steam for another 5 minutes.
