The first one: Copper Dumplings
Put four pieces of dumpling skins into the filling separately, put a little bit less filling in the skins, fold them in half and seal them. Then place the four dumplings with the seals facing outward, press them against each other to form a circle, place them in your palm, and pinch the edges of the round dumplings together.
With your right hand, pinch the round dumplings to create a spike-like lace.
Second: Sunflower Dumplings
Place the filling in the center of one gyoza skin, and take another gyoza skin to cover it. Pinch the edges of the two overlapping dumpling skins with your fingers to thin them out, and then pinch them together to form a spike-like lace.
Third: Wave Dumplings
Take the dumpling skin in the palm of your hand, put the filling in, fold it in half, and seal it into a semicircle. Starting from the left side, right hand index finger slightly over the front of the thumb, index finger slightly push the dumpling skin forward folded, the front of the thumb lightly pinched, repeat this step until the right side.
