How to make puff pastry
Materials
Main ingredients: 100g low-gluten flour, 72g butter, 1 egg yolk, 45g fine sugar

Method
1. Cut the butter into small pieces and soften it, add fine sugar, and beat with a whisk until The color becomes lighter and the volume becomes fluffy.
2. Add egg yolk and continue to beat for a while.
3. Sift low-gluten flour into butter.
4. Use a rubber spatula to mix evenly until the flour and butter are completely mixed into a moist dough.
5. Round and flatten the dough, place it between two pieces of oil paper or plastic wrap, and use a rolling pin to roll it out into a dough sheet with a thickness of about 0.6-0.7cm (the roll should be thicker than ordinary biscuits. Place it between two pieces of oil paper and roll it out so that the rolling pin and chopping board won't stick).
6. After rolling out, tear off the oil paper on the surface, and use a knife to cut off the irregular parts of the dough to make it into a rectangular shape.
7. Then cut into small rectangular cubes (you can also use molds to make biscuits of different shapes).
8. Place the cut biscuits on the baking sheet, leaving enough distance between each biscuit. The excess dough can be rounded and rolled out again for use.
9. Place the baking pan into a preheated oven at 180°C and bake for about 14 minutes.
