1. Mushroom and Tofu Soup
1. Wash the mushrooms, boil them in hot water for three minutes, take them out and put them on a plate to drain. 2. Cut the tofu into small cubes and soak in some salt for ten minutes. 3. Put oil in the pot, add green onion and ginger, pour in the mushrooms and fry. 4. Add some boiling water to the pot, add soy sauce and vinegar, cook for three minutes, then add the tofu cubes and cook. 5. Add salt and pepper, and pour some water starch into it. 6.
