Race black tea is a kind of black tea produced in Nanping City, Fujian Province. Race black tea can be divided into zhengshan race and waishan race. The black tea of Zhengshan Race and Yanzhengshan Race is fat in appearance, with no buds, and the color is moist; while the black race is tight, slightly moist, black, moist or not moist, with short and flat strips, and Zhengshan Race has a unique dry longan flavor and mountain rhyme.

Suitable water temperature is beneficial to the leaching of aroma, taste and rich contents of Zhengshan small tea. Generally, we use boiled water that is naturally cooled to about 85-90℃ for brewing. The reason why the water temperature is higher than that of traditional green tea is that the selection of materials and the production process of Zhengshan small black tea are special.
The brewing time of Zhengshan small black tea should not be too long, and the soaking time of the first tea should not exceed 10 second. It is better to produce water within 5 seconds to prevent the aroma of Zhengshan small black tea from having adverse effects. The soaking time of different varieties of Zhengshan small black tea is different.
