Charcoal-grilled yogurt is based on the processing technology of ordinary yogurt. The raw milk will undergo a special browning process, that is, it is heated cyclically at 90℃~95℃ for 120 minutes, and the "Maillard reaction" occurs. Charcoal-grilled yogurt adopts a low-temperature and long-term fermentation process, fermenting at 37°C for 6 to 8 hours to increase the production of flavor substances.
2. Taste: Ordinary yogurt has a milder taste and a more even color. Due to the Maillard reaction, the charcoal-roasted yogurt has a richer taste, a burnt flavor, and an attractive caramel color.
3. Nutrients: Ordinary yogurt is rich in protein, calcium, vitamin B and other nutrients, which helps to strengthen physical fitness, promote metabolism, improve immunity and other benefits. Although there is no significant difference in protein, fat, and mineral content between charcoal-grilled yogurt and ordinary yogurt, its vitamin and active substance content will be reduced due to the high-temperature browning process during processing.
