1. Ingredients: 1 fresh radish, 4 spoons of mature vinegar, 1 spoon of white vinegar, 2 spoons of soy sauce, half a spoon of dark soy sauce, appropriate amount of sugar, appropriate amount of salt, and appropriate amount of ice-cold distilled water.
2. Clean the radish, cut off the head and tail, and then slice and cut the radish into strips.
3. Marinate the radish with salt for about 30 minutes to bring out the spiciness.
4. After 30 minutes, pour out the marinated water, rinse with some cold water and drain thoroughly.
5. Add some sugar and marinate for another 30 minutes. Repeat 2 times and marinate for 30 minutes.
6. Pickle a lot of radish in spicy water three times in a row.
7. Rinse with ice water again, drain and put into a glass bottle. Add 4 tablespoons of vinegar.
8. Add other seasonings and mix well.
9. Pour in the cold distilled water and just soak the radish.
10. Close the lid of the crisper and place it in the refrigerator. Take it out the next day and mix it to make it easier for the vinegar to take in the flavor.
11. It can be eaten after three days. Generally, it will taste better if soaked for two more days.
