According to legend, Dongpo gave back meat when Su Dongpo was in Xuzhou. According to historical records, Su Shi was appointed as Xuzhou Zhizhou in April of the tenth year of Xining in Song Shenzong in A.D. 1077. Su Dongpo, who just took office less than four months ago, was hit by a burst of the Yellow River, and the flood went straight to the gate of Xuzhou along Surabaya, followed by heavy rains, and the water level soared. Seeing that the city and the people of Limin were in a very critical situation. At this time, Su Shi, an official of Xuzhou, regardless of his personal safety, took the lead, led the imperial military camp, and built dikes to protect the city with the people of the whole city. After more than 70 days and nights of hard work, the life and property safety of Xuzhou City and Limin people was finally saved. Su Dongpo once said in the poem "Answer to Lu Liangzhong's Reclaiming Farmland": "The Yellow River came to the west at first, but I was surprised that it was clear and muddy, and I heard the horns on the sand bank at night, but I saw the snow waves floating and floating." Another cloud said, "The old road will destroy the scars, and it will be even harder next year." Truly described the vivid scene of the flood fighting.
After the victory of the flood control, the people in the city, in order to thank the "parents" who lived with the people day and night and endured hardships and hardships, slaughtered pigs and sheep in succession, and sent them to the Zhizhou yamen with gongs and drums as a token of their hearts. Su Dongpo, who was "honest", did not refuse, and accepted them one by one, and personally instructed the chef to cook these pigs and mutton, respectively, and give them back to the people who participated in the flood control. Therefore, people later called it "Dongpo gives back meat". After eating, the people all think that this meat is fat but not greasy, crispy and delicious, and all of them applaud. According to the "Da Peng Cooking Record" in the early years of the Republic of China, there was a poem about giving back meat: "The wild waves and the rain invaded Peng Lou, working hard day and night to know Suzhou, offering three sacrifices to Li, and Dongpo cooked to give back meat." This is the origin of this dish.
