Braised vegetables
Ingredients: 100 grams of fresh pepper and 20 grams of Sichuan peppercorns.
Seasoning: 4 slices of ginger, 2 star anise, a small section of cinnamon, and white sesame seeds.
Method:
1. Pour dry red pepper and Sichuan peppercorns into an oil-free cold pan, stir-fry slowly over low heat for about 1 minute and turn off the heat.
2. After cooling, take one-third and grind it into chili powder with a grinder.
3. Grind the other two-thirds into chili powder.
4. Mix chili powder and chili powder, add a teaspoon of salt and sugar, stir evenly, and then sprinkle with a layer of white sesame seeds.
5. Heat oil in a cold pot, add ginger slices, star anise and cinnamon, and boil the oil over medium heat.
