Homemade fries need to be frozen in the refrigerator for at least three hours, but no more than four. It's not true that the longer you freeze them the better they are, some people may think about freezing them overnight and then getting up and getting them again the next day, but you won't achieve a very crispy result if you freeze them for too long.
But when freezing remember not to put it all together or the fries will freeze and become one piece, which is very disruptive later on. You can just spread it out on a plate, leaving some gaps, and cover it with a layer of plastic wrap.
