I. What do you need to pay attention to if you want to make homemade plum wine?
Step 1: Prepare fresh plums. Look for it and pick it out. As long as it is intact, pick out the lumps and bruises. Remove the vertebral root handle, clean it and soak it in water for 2 hours. The purpose is to remove some of the bitterness and astringency. Then take it out and put it in a cool place to dry the surface moisture (do not expose it to the sun).
Step 2: After drying the plums, use a toothpick to make some small holes on the surface of the plums. The purpose is to promote the oozing of plum juice, the effect of soaking wine will be better. If you don't like the hassle, you can boil a pot of boiling water, blanch the plums in the pot for 15 seconds, then blanch the surface to discolor slightly, then take them out to dry the water vapor.
Step 3: Prepare a clean container, glass jar or clay pot. Clean and make sure there is no water or oil. Place the prepared plums inside and spread a layer of icing sugar, then another layer of plums and another layer of icing sugar. Hold until eight minutes, then pour in about 30-40 degrees of rice wine or fenjiu. If there are no green plums, leave a little space at the mouth of the bottle.
Step 4: Seal the bottle tightly and put it in a cool and light place. Basically, you can drink it after 3 months, and it tastes better after 6 months. Because the fruit of the green plum is relatively firm, without breaking the skin will not affect the clarity of the wine. If you find the bubbles are cloudy, you can fish out the green plums, strain the wine through a fine mesh, and then continue to store it. After 6 months of soaking, the plum wine has a golden color, light fruity aroma, soft taste, sweet and sour, and is very delicious.
2. Tips:
1. Green plums do not need to be ripe, just a little green. Be sure to dry the water after washing, don't use raw water. Wipe the bottle clean too. If you are a veteran, you can use clay jars; novices are advised to use clear glass jars, so it is easy to observe the inside at any time.
2. qingmei: rock sugar = 2:1. the amount of rock sugar can be less, but do not put too much rock sugar. If you put too much rock sugar, the flavor will be too sweet and greasy, masking the flavor of the plums, but the taste will not be good. The type of icing sugar is optional, you can use white icing sugar and old icing sugar; it doesn't affect the wine much, you can use whatever you want.
3. The wine must be pure grain wine, preferably rice wine or Fen wine, or vodka can be used directly. Because the plum wine itself is relatively light fruity flavor, strong white wine and soy sauce white wine wine aroma is too heavy; if used to make fruit wine, it will cover the flavor of the plum itself, the final effect is not good. So it is better to use rice wine or Fen wine.
The above is all about what you need to pay attention to if you want to make homemade plum wine, I hope it will help you
