Snail flour is one of the special snacks of Liuzhou City, Guangxi Zhuang Autonomous Region, with a unique flavor of spicy, refreshing, fresh, sour and hot [7]. It is a famous snack with the most local characteristics in Liuzhou. The flavor of snail flour is also because it has a unique soup. The soup is made of natural spices and flavorings, such as snail, sannai, star anise, cinnamon, cloves, many kinds of chili peppers, etc. In 2008, the handmade snail noodle technique of Liuzhou was selected as the second batch of intangible cultural heritage list of the Guangxi Zhuang Autonomous Region.In 2015, in the third amendment to the Local Standard for Snail Vermicelli of Liuzhou, and Local Standard for Pre-packaged Snail Vermicelli of Liuzhou, it is stipulated that the official English name of the snail vermicelli is designated as : "Liuzhouriversnailsricenoodle".
