Stewed beans with big bones is a typical home-cooked dish in Northeast China, and I have done it in many ways. Today, I share a simple and easy-to-do method that is suitable for lazy people. Although it is simple, it tastes great, and it is just one word: fragrant.

Stewed beans with big bones

The main ingredients are big bones, beans, onions, garlic and ginger.

Detailed practice

Step 1: soak the big bones in clear water for an hour, and try to soak out the blood inside. Add clean water to the pot, put the washed big bones in cold water, then add ginger slices and cooking wine, boil over high heat and cook for 3-5 minutes, and try to cook bleeding foam.

Step 2: Take out the big bones boiled with bleeding foam and clean them for later use.

Step 3: Add water to the pot, put the boiled bones, then add star anise, cinnamon, fragrant leaves, Amomum tsaoko, ginger slices and cooking wine, boil over high fire, turn to low heat for 30 minutes, then add appropriate amount of salt, continue cooking for about 20 minutes, and turn off the fire for later use. If you want to save time, you can also directly press it in a pressure cooker for 20 minutes.

Step 4: remove both ends of the beans, and remove the silk on both sides, and then clean it for later use; Cut shallots and garlic slices for later use.

Step 5: Pour the oil from the pan. When the oil is hot, add the onion and garlic slices and stir-fry until fragrant. Then add the beans and stir-fry until the beans turn green and soft.

Step 6: Add thirteen spices, light soy sauce, dark soy sauce and a little sugar, and stir well. Pour the cooked big bones and soup into the bean pot. The soup should be the same as the dish. If the bone soup is not enough, add some hot water.

Step 7: After boiling over high heat, turn to medium heat and continue stewing for about 30 minutes until the stewed beans are completely cooked.

Step 8: It's easier to stew beans with big bones like this, and it won't be very greasy. You can try it if you like.
