Ingredients required: 450g adzuki bean (I bought a package of 450g, so if you use a package of 500g, just calculate the proportion and add some water. ) 250g brown sugar, corn oil 100g, 700ml water.
Production process:
1 Wash 450g adzuki beans with clean water and soak them in colder water for one night. I always soak them before going to bed and make bean paste the next day.
The next day, the soaked red beans were drained and poured into the pressure cooker.
3 Add 700 ml of cold water. I use the pressure cooker that can be used on the gas stove, which will volatilize more water. If you use an electric pressure cooker, you should add less water than me, because the electric pressure cooker does not volatilize more water than the ordinary pressure cooker.
If you don't have a measuring cup, you can also observe the water level. Probably, water is one and a half index finger joints higher than red beans, which can only be roughly estimated. Because everyone's finger length is different, it is best to use a measuring cup, but you can't measure it with a mineral water bottle.
5. Cover the pressure cooker and bring it to a boil. Turn off the fire 15 minutes after the pressure limiting valve starts to deflate. (I also want to say here that the size of fire is also related to volatile water. The smallest fire core in the middle of the gas stove I used. )
/kloc-Turn off the fire after 0/5 minutes, and open the lid after the gas in the pot is exhausted. Beans are soft and rotten, but they have no water.
7 shovel red beans with a shovel. You see the bottom of the pot is very dry, and you can't see the water. This is just right. This proportion of cooked red beans has the least moisture, so the frying time will be the shortest.
8 Use a manual meat grinder to grind cooked beans, and use the part with smaller hole ratio. If there is no manual meat grinder, just shovel it with mashed potatoes. In short, it is best not to use an electric meat grinder for this dried bean curd, because it will burn if it is not easy to grind. I just twist the bean paste in a non-stick pan so that a container can be brushed less.
9 Add 250g of brown sugar to the twisted bean paste. I think this sweetness is already quite sweet. If you don't like sweets, you can add less brown sugar, and if you like sweets, you can add more.
Add100g corn oil and sunflower oil to10g bean paste. Don't use the heavy oil of rapeseed oil, it will affect the taste of red bean paste. In addition, it is not recommended to drain less oil. There really isn't much oil in this big pot of bean paste. Put less oil, and the bean paste will taste bad.
1 1 Stir-fry with high fire first, then change to medium-low fire and stir-fry with a silicone spatula. My method of frying bean paste won't make it bubble, and it won't burn easily.
12 fried like this for five minutes, and continued to fry.
13 has been fried for 9 minutes, until the bean paste becomes a big lump, and it doesn't stick to the pan or shovel, which is enough. With my method, it really only takes 9 minutes to fry, and you don't have to stand in front of a hot stove for a long time.
