Preparation
First of all, we need to prepare the ingredients for the cake. Here I chose buttercream as the bottom layer, mousse as the middle layer, and finally buttercream to create a fine appearance.
Ingredients:
-200g low gluten flour
-50g light cream
-4 eggs
-80g sugar
-10g cornstarch
-1 tablespoon of baking powder
-100g light cream
-50g sugar
-3 slices of Girardin slices
-200g strawberries
-200g light cream
Procedure
1. First of all, we have to start by whipping the eggs and sugar. Crack the eggs into a bowl, add the sugar and whip with an electric whisk until the egg mixture becomes white, larger in volume and visible lines appear.
2. Next, sift the low gluten flour, cornstarch, and baking powder and add them to the egg mixture, stirring gently to combine.
3. Add the light cream to the egg mixture and gently mix well again.
4. Pour the cake batter into the mold and bake in a preheated oven at 170 degrees for 20 minutes.
5. Soften the custard slices in cold water and cut the strawberries into small pieces.
6. Mix the light cream and sugar and whip to a creamy consistency, add the strawberry pieces and mix well.
7. Add the softened custard slices to the strawberry cream and mix well.
8. Pour the strawberry mousse onto the cooled cake.
9. Chill the cake in the refrigerator for another 2-3 hours.
10.Finally, whip the light cream, mount it on the cake and decorate with strawberries and chocolate.
