To make chili red oil, the most fragrant spices are star anise, cinnamon, pepper, and cooked sesame.
Ingredients preparation: 50g dried red pepper, 3g Sichuan peppercorns, 5 star anise, 3 slices cinnamon, 10g cooked white sesame seeds.
The steps for making red oil are as follows:
1. Pour dry red pepper and Sichuan peppercorns into an oil-free cold pan, stir-fry slowly over low heat for about 1 minute and turn off the heat.
2. After cooling, take 1/3 and grind it into chili powder with a grinder.
3. Grind the other 2/3 into chili powder.
4. Mix the chili powder and chili powder, add a teaspoon of salt and sugar, stir evenly, and then sprinkle with a layer of white sesame seeds.
5. Heat oil in a cold pan, add star anise and cinnamon, and boil the oil over medium heat.
