How to clean fresh abalone
First, clean the exterior of the abalone. You can use a toothbrush to clean the shell of abalone. The second step is to separate the meat and shell of abalone. There are two ways to do this:(1) Use a knife, spoon or small rice spoon (preferably a starter one, don't hurt your hand easily) to cut the abalone meat and shell from the flat side and cut it into pieces so that the abalone meat and shell are completely separated. Be careful if you use a knife. Safety first. (2) Wash the abalone and throw it into a pot to cook. After cooking, you can easily separate the meat and shell with a knife. Take out the innards. At this point you can see the black or yellow abalone belly guts. Remove the innards. The innards can actually be dry fried until crispy and eaten with a sprinkling of chili. Go to the stomach gastroesophageal tube abalone mouth in the narrow end of the abalone body, inside the stomach tube, decomposition must be removed along with the mouthpiece, so as not to affect the taste. Wash away the mucus. Wash the adhering mucus with coarse salt and then rinse it off with water. (5)Heat the oil in a hot pan, stir fry the garlic paste in the pan, take out some on each abalone with a small spoon and put the rest on the vermicelli. (6) Mix seafood soy sauce, oyster sauce, cooking wine and a little sugar in a small bowl. Drizzle over the abalone and vermicelli.
