Dice onion;
Sliced garlic;
Picking leek, washing and cutting into small pieces;
After breaking the eggs, add 2 tablespoons of water and a little rubbing salt.
Cool the oil in a hot pan. When the oil is heated to 70%, add garlic slices and onions and stir-fry until fragrant.
Pour in leek and stir-fry for about 3 minutes (don't stir-fry for too long)
On a medium or small fire, pour in the egg liquid, wait for the egg to solidify a little, then gently pull it with chopsticks, wait for the egg and leek to adhere to each other, and stir fry slightly.
Stir-fry until the eggs and leeks are basically solidified and there is no egg liquid in the pot (probably like this in the picture). Add rice.
After adding rice, turn to medium heat, flatten and disperse the dough rice with a shovel, and mix it with leek eggs better.

Tips
1. Pick leek, wash it, and cut it into1-2cm (cutting it too long will affect the taste, and it is easy to separate leek from rice when it is sandwiched).
2. Add 2 tablespoons of water after the eggs are broken up (if you have to heat the water, please forget I said this). The scrambled eggs are less like the aunt of the neighborhood Committee.
Never use soy sauce or soy sauce, or Lin Daiyu will become fierce. Lee Kum Kee's thin salt soy sauce is not too dark in color, and it is a little sweet, which matches the fresh taste of this fried rice.
