Practice
1. Remove guts and gills from the fish, cut off the fins and tail, and then cut diagonal slashes on both sides of the fish; then dry the fish as much as you can with kitchen paper
2. Add about 50g of oil to a wok and fry the fish on a medium-high heat. Turn the fish over when one side is golden brown, and serve the fish when the other side is also golden brown
3. Leave a little oil in the wok, add chopped green onion, ginger and garlic, add 1/2 tablespoon of vinegar, 1/2 tablespoon of cooking wine, 2 tablespoons of soya sauce, 1/4 tablespoon of sugar, a pinch of salt, and a bowl of water
4. When the water in the wok boils, put in the pan-fried fish, and simmer it gently for half an hour, then reduce the soup to a high heat and serve it on a plate, sprinkle with Cilantro
