The origin and preparation of candied haws

During the Shaoxi period of the Southern Song Dynasty, Huang Guifei, Song Guangzong’s favorite, fell ill with a strange disease. She suddenly became sallow and thin, and had no desire to eat. The imperial doctor used many expensive medicines, but none of them worked. Seeing that the imperial concubine was getting seriously ill day by day, the emperor had no choice but to advertise for a doctor. A charlatan entered the palace. After diagnosing the pulse of the imperial concubine, he said: "As long as you boil 'Tangqiuzi' (hawthorn) with brown sugar and eat 5 to 10 pieces before each meal, the imperial concubine's illness will be cured in half a month." After taking this prescription, I recovered as expected. So Long Yan was very happy, and his fate was as planned.

Later, this sour, crisp and sweet hawthorn spread to the people and became candied haws. Method: Raw materials: white sugar, hawthorn, bamboo sticks, edible oil.

Equipment: 1 small pan, 2-3 wooden boards (note that the wooden boards must be soaked first).

Production process: First put the white sugar into the pot, then add clean water. The amount of water added is appropriate to soak the white sugar. Then stir while heating. When all the sugar liquid in the pot boils, stop stirring and continue heating over low heat. When there is a crackling sound in the pot, use chopsticks to dip a little sugar liquid into cold water and cool it. After cooling, bite it with your teeth. If it sticks to your teeth, you need to continue heating; if it does not stick to your teeth, it will feel like eating fruit candy, which proves the heat. Just right. At this time, you can put the pre-threaded hawthorn skewers in the sugar pot, roll them in a circle and cover them with sugar liquid, take them out and put them on a wooden board smeared with edible vegetable oil, and smash them hard, so that the candied haws have an obvious big sugar. Film, very beautiful. After cooling for five minutes, it can be removed.

The hawthorn can be cored or not; you can also cut the hawthorn with a knife and insert peanuts, apples, walnuts, etc. to make candied haws.

If you want to add honey, just use honey water when cooling the boiled syrup. Do not add honey when boiling sugar, because high temperature will destroy the nutrition of honey.
