4 to alkali. Old dough will produce a lot of lactic acid bacteria, which must be neutralized by adding soda water. Generally, 50-55g of soda is added to dough in summer 10 kg, 40-45g in spring and autumn, and 30-35g in winter, and soda water must be melted with warm water.

5 knead noodles. Only a little dry flour is allowed to be mixed into the cake surface, not too soft, and it is advisable not to touch your hands. After repeated extrusion and kneading, the surface is smooth, hand-polished and basin-polished, and the surface is kneaded. (Turn on the electric cake gear switch at this time).

6 make a blank. Push the kneaded dough away with a dough stick, so that the thickness is basically uniform, and use a mold to cover the dough with plastic paper or white cloth, and it will automatically wake up in about 10 minutes.

7 on the pot. When the temperature of the electric cake stall is up and down (generally, the upper temperature is 160 degrees, and the lower temperature is 140 degrees), the cake blank can only be put in when the two red indicator lights are all on, and the lid is covered, and the cake will be cooked in 15 minutes at most.
