Raw tea: refers to tea that is fermented in a natural way after tea seeds are picked. Raw tea contains fruit acid, tannic acid and other ingredients, which is irritating to tea. After many years, the tea party will become gentler. Good Pu 'er tea is generally made in this way, and the older it is, the more fragrant it will be.
Cooked tea: refers to the use of artificial aging technology on the basis of modern science, through the deployment of appropriate temperature and humidity, to accelerate the fermentation process of tea, so that tea becomes mild and changes the taste of tea.
(2) Classification by preservation method
Dry storage of Pu 'er tea: refers to the storage of tea in a clean and ventilated warehouse, so that the tea will naturally ferment and age, with the fragrance of camphor trees. If it is preserved in Chen Fang for 10-20 years, it will become more and more fragrant and become a treasure.
Wet storage of Pu 'er tea: refers to the storage of tea leaves in damp and sultry places such as basements and cellars without ventilation to speed up their fermentation. Because the contents of tea are destroyed, it often tastes cloudy or musty. The so-called "wet warehouse" means that speculators put the finished Pu 'er tea with a relatively short age in a high humidity environment, and use high humidity or splashing water to make the new tea change rapidly, so as to meet the market with the appearance of old tea. Catalyzed by this method, the processed tea products are easy to mildew, and can not help brewing at high temperature, which is more harmful to human health.
