Ingredients: goose head 10. Seasoning: 25g chopped green onion, 25g ginger slices, 25g garlic slices, 3 dried peppers, 2g pepper, 25g bean paste, 25g yellow wine, 8g sugar, 8g refined salt, 3g pepper and 35g salad oil.
Exercise:
(1) Wash the goose head, blanch it in boiling water, remove it and rinse it with clear water.
(2) Heat a wok with a large fire, put oil to 40% heat, add bean paste and stir-fry until fragrant, cook rice wine, pour a proper amount of boiling water (preferably not to the second finger of goose head), slightly cook, remove the bean paste residue with a colander, and add goose head, onion, ginger, garlic, pepper, sugar, rice wine and essence.
