There are several ways to keep rice overnight on the Internet. I'm here to write down my own attempts and find the best way.
1. Keep it warm
Generally, after cooking, the rice has not started to deteriorate within eight hours, but once it exceeds eight hours, you should be careful. We'd better add some water after eight hours of cooking rice. Then, according to the cooking of the rice cooker, it is heated back to the pot, which can kill the existing microorganisms. If you want to spend the night, before going to bed, sprinkle some dilute salt water on the surface of the rice, then press the heat preservation, and you can go to sleep peacefully. You can heat the rice again tomorrow and continue to eat. This is based on the principle that microorganisms are not easy to survive at high temperature, and rice can be kept overnight by continuously maintaining a high temperature. The advantage of this method is that storing rice in summer will never go bad, and it won't consume much electricity. If there is a pressure cooker, you don't have to press the heat preservation after heating, and that temperature can last for a long time. The disadvantage is that the long-term high-temperature storage of rice affects the taste and causes some nutrient loss. But even if other methods, the shortcomings are still the same, just a matter of how much. But your ultimate goal is that eating rice overnight will not harm your health, so I personally recommend this method.
2. Keep it at low temperature
It is best to put it in the refrigerator. If there is no refrigerator, take a big basin with cold water, put the rice in a box, put it in water and keep it cool. Preserve rice by using microorganisms that are not easy to reproduce at low temperature. Personally, I think this method has a lot of uncertainty, and your ambient temperature can't be controlled accurately. Once the temperature is high, such as summer, it will still be bad. The temperature of water is changing. If there is no sealed box, the bacteria in the air will still spoil the rice after contact with the air. This method is a lot on the Internet.
3. Preserve with vinegar
Cooked rice should not be stored for a long time, especially in summer, it is easy to turn sour. When steaming rice, if you put some vinegar in the proportion of 1.5 kilograms of rice and 2 to 3 grams of vinegar, it will make the rice easy to store, and the steamed rice has no sour taste, but the rice flavor is stronger. This method has never been tried. Students with courage can try it. The specific principle should be that microorganisms should not breed in the acidic environment of vinegar, so it is not clear.
4. fry and store
this method is to cover it with plastic wrap after frying, or seal it with a lid and store it in a cool place. Personally, I don't think this method is very desirable. Rice is cooked, unless you think you can get up in eight hours and fry it again.
the best way is to cook as much as you eat, and don't waste it. It's not the money, but there are still many people who don't have enough to eat. In the end, it is important to be healthy. Don't eat it if it is found to be spoiled.
