1. Local production technology
Sugar liquid preparation: Select 55kg of white sugar, add 1 liter of water and stir to fully dissolve the strong electrolytes in the sugar. Old rock sugar cooking method
Before cooking, add cooking oil in the middle compartment of the cooking pot, then pour the prepared sugar liquid into the top pot and cook the material over fire. When the sugar solution boils for 5 to 6 minutes, add 0.5Kg of saturated alum aqueous solution at room temperature and stir while adding to fully mix. Use a thermometer to measure. When the temperature in the sugar solution rises to 150°C, stop heating and lower the temperature. When cooking, the best temperature is 115~120℃.
Crystallization method
Pour the sugar liquid from the pot into a plate and place it on the grave pit. Cover it tightly with a clean quilt. The temperature in the plate should be maintained at about 90°C that day, and every day thereafter. Reduce the temperature by 10°C every day until it reaches the seventh day. If the temperature is insufficient, you can add fire to raise the temperature of the pit. Generally, the sugar liquid is not afraid of cold but not heat during the crystallization process.
