Leiguan dried salted duck, a long-standing traditional dish in Leiguan, a water town in Lai 'an County, Chuzhou City, Anhui Province, is named after its place of origin, Leiguanji. Originated in Tongzhi period of Qing Dynasty, dried salted duck was made by four processes: slaughtering, marinating, drying and boiling. The appearance of salted duck is bright and clean, milky white, fat but not greasy, tender and delicious, moderately salty, fresh and mellow, and attractive to eat.
2. Fermented bean curd in Fengyang
Fermented bean curd in Fengyang is a traditional dish with special features in Chuzhou City, Anhui Province, and Fengyang locally calls it "fermented bean curd" (pronounced as the third sound, meaning stuffing). The color of the dish is rosy, the stuffing is salty and fresh, and the whole shape and taste of tofu balls are like cherries.
3. Preserved eggs of Jingcai Songhua
Preserved eggs of Jingcai Songhua were made as early as the Qing Dynasty. The egg body is transparent, with a loose pattern, mellow fragrance and delicious taste, which has won many prizes in the quality appraisal of the same industry inside and outside the province. In 1983, it was awarded the first place in the quality of preserved eggs exported by Guangdong Province, and it is well-known in Hong Kong, Macao and Southeast Asia.
4. Zhougang Snow Jujube
The main ingredients of Zhougang Snow Jujube are glutinous rice and flour, and the ingredients are white sugar, soybeans and vegetable oil. Legend has it that it was created by Dong Xiaowan, the concubine of Maobijiang. Wu Jingzi's motherland was kind to Maopi, and one day she went to Rugao to eat this dim sum, and her stepmother celebrated her seventieth birthday with Dong Laiquan pepper. Dong handed down this skill in Wu Fu to please Sheng Shi. Zhougang is the Wu family's dining hall, so the snow jujube stunt was introduced to Zhougang.
5. Guanba Beef
Guanba Beef, a traditional halal dish in Quanjiao County, Chuzhou City, Anhui Province, is famous in Jianghuai. Guanba is a mountain township in the west of Quanjiao County, where Muslims live. The slaughter and processing of beef by Muslims here has a long history and unique flavor.
