Recipe practice:
1. Buy it in a small bucket and wash it with clear water first. Add a small amount of ginger and cooking oil to make it spit out sediment.
2. Be sure to have a sieve with a handle at home to avoid burning your hands. Pour the required loach into a sieve.
3. Important step: After the water is boiled, lift the pot cover with your right hand, and quickly pour the loach into the pot cover with your left hand, and press it hard (be careful that the water overflows at this time).
4. Generally, cooking for 30 seconds will remove the mucus from the loach, then take it out, wash it with clear water and fry it in the oil pan a little, so that the loach has no fishy smell.
