Method 1: shallow frying.
1, choose the right oil. Butter and other oils with low smoke point are not suitable for frying. Rapeseed oil, grape seed oil, vegetable oil, corn oil, peanut oil, safflower oil and sunflower oil are all good choices. Olive oil is suitable for frying small pieces of food.
2. Prepare the frying pan. The frying pan should be big enough to hold the fried food. You can also choose a deep cast iron frying pan. When frying, just pour a quarter of the oil into the pot.
3. Pour the oil into the frying pan and heat it on the fire. Watch the heat. Overheated and smoky boiling oil can easily burn people, so please wear long sleeves, apron and heat insulating gloves.
4. Heat the engine oil to 163- 177 degrees Celsius. When the oil is boiling, put a wooden spoon in it, and the edge of the wooden spoon will bubble. If you want to control the temperature more accurately, you can also put an insulating thermometer to measure the oil temperature in the oil pan.
5. Pour the food to be fried into hot oil. Don't pour directly into the oil pan from a height, the spilled hot oil will cause serious burns.
6. When the food is fried into golden brown, you can turn it over. You can lift the food slightly with a spatula to see if the corners are fried thoroughly.
7. Stir-fry the food with a clip or spatula. It is best to fry the food in batches to be similar in size, so that the time can be strictly controlled.
8. Hold the food with a colander or pliers. Put it on a paper towel to absorb oil and dry it. Eat it while it is hot.
